Ingredients For Your Dorset Apple Cake
The most important ingredient for your Dorset Apple Cake is, of course your apples. Bramley cooking apples make the obvious choice with their sharp, tangy flavor and soft, yielding texture once baked. The quantity of sugar in this recipe is kept to a minimum to bring out the full tartness of the apples but this can be adjusted according to personal taste.- 12oz (330g) cooking apples such as Bramleys
- 8oz (220g) self raising flour
- 4oz (110g) margarine ,butter or a mixture of the two
- 2oz (55g) sugar
- A pinch of salt
- About 2 tablespoons of milk
- Cinnamon or mixed spice
- Demerara sugar for sprinkling
2. Rub in the fat until the mixture resembles breadcrumbs
3. Peel, core and chop the cooking apples into small pieces (they don't have to be even)
4. Mix the apple pieces and sugar into the flour mixture until evenly coated
5. Gradually mix in enough milk to form a soft but not too soggy dough.
6. Grease or line a flat baking sheet
7. Lightly dust your hands with flour
8. Shape the dough into a rough oval on the tray, allowing room for the mixture to spread
9. Bake in the middle of the oven at Gas Mark 4, 350F or 180C for about 45 minutes
10. The cake is cooked when lightly browned and slighty firm to the touch
11.Sprinkle with the demerara sugar and serve straight away.
