- Ingredients (Serves 4)
- *10 sardines (500g/ 18oz)*1 Japanese leek*1 package bean sprouts*Chopped green onions *Grated "Daikon" Japanese radish*Grated ginger*1 tsp "Miso" bean paste*Soy sauce with sliced ginger(soak sliced ginger in soy sauce for 1 day)*Salt&pepper
1. Remove the heads of sardines.
2. Make a slit into the stomach with a knife tip.
3. Open up the fish with fingers, remove the innards, and rinse in running water.
4. Wipe dry with paper towels.
5. Slice it from the tail. Turn it over and slice the other side.
6. Peel the skin and chop the flesh until it is the consistency of hamburger meat.
7. Coarsely chop the Japanese leek and mince the ginger. Grate the "Daikon" radish.
8. Put the sardines in a bowl. Add the leek, "Miso" bean paste, grated ginger, little salt and pepper. Mix well.
9. Divide the meat into eight equal portions. Form into balls and flatten into an oval shape.
10. Turn the heat on high. Add some cooking oil to the frying pan. Brown both sides, and then lower the heat to medium to cook a little longer.
11. Fry the bean sprouts with oil and season with a little salt and pepper.
12. Spread the bean sprouts on a plate and put the sardine burgers on top.
13. Serve with grated "Daikon" radish and finely chopped green onions. Finally, pour soy sauce with sliced ginger on top.
